Corsair Modular PSU interchangable? Series question also

I currently have a Corsair HX620w psu that is modular and I'm looking to upgrade to either a TX750/HX750 or TX/HX850 unit. Can I use my current cables and just connect them into the new psu? It would be nice to not have to redo all the wiring.

Also what are the differences between the Enthusiast and Professional Series PSUs?

I'm looking to increase to a higher wattage psu because I'd like to get another 6970/6950 for crossfire. I've heard people with similar set ups running 6970s in crossfire with my current hx620 but I don't think that is gonna cut it having things overclocked. Which would be a better choice for a 6970 crossfire set up 750w or 850w?

My other components are a AMD pII x6 1090T OC'd ~4.0ghz, 16gb ddr3 1600mhz ram, 1 XFX 6970 OC'd 950/1440, 1 7200rpm HD, 1 10krpm Vraptor, 1 Crucial c300 120gb SSD, Corsair H50 CPU Cooler (soon to be a H100), and about 8-10 120mm-140mm case fans.

Personally I have a 6950 CFX setup using a Corsair TX850. I moved away from modulars because I had some issues with them, but they do help keep your system clean.

As for the difference between the different series, it speaks a little about it on their page. The professional series are supposed to be made with better components, provide better stability and more durability. The enthusiast series is supposed to be a slight step down from the pro series. The gaming series is meant to be a bang for the buck product.

I would recommend going with the enthusiast or professional series. The pro series I believe is all modular as well. So if you want to stay with modular, go with the pro series. Otherwise the TX850 should be fine. Here are some reviews from Jonny and HardOCP:

The HX850 definitely seems to be preferred and offer better overall performance and cable options.

No, you can't. The HX520, HX620, and HX650 are compatible with each others' cables, but the HX750 and HX850 are not, nor are the TXM series units.

They use different designs and have different features. The HX line is higher-end, more efficient, and modular. Although the TXM series is also modular, those units have more hard-wired connectors and fewer modular ones.

750W is plenty. There's no need to spend more on an 850W PSU.
 
Similarly, I have a HX1000 and I'm wanting to upgrade to a Gold AX1200.

Are those cables compatible?
