I have a N router and a G adapter that is complete crap.

Any suggestions on wireless adapters? It can be either pcie or usb.

Do more antennas mean better signal? I see newegg has a few that have 2 or 3 antennas but there are more reviews on the ones with 2 antennas.
 
No, more antennas do not necessarily mean you'll get a better signal. Bigger antennas often mean you'll get a better signal though. You only need 1 antenna for G or 150Mbps N, 2 antennas for 300Mbps N, or 3 antennas for 450Mbps N. Putting 3 antennas on a 300Mbps product is not helpful.

What make/model is your G adapter?

I would get this one for $14: ENCORE ENUWI-2XN42 USB 2.0 Wireless N300 Adapter, 2dBi
