So we got one of those Samsung Smart LED 3D TVs that has an ethernet jack on the rear. It shows up in my windows 7 homegroup... is it possible for me to stream movies, display photos, or listen to music through the TV from a dedicated server without needing a dedicated HTPC connected to the TV?

If you have the right things in place, then yes. Most modern TV's support DLNA and all that comes with it.

AllShare™ DLNA® Technology
Samsung’s AllShare lets you sync up many of your DLNA-enabled digital devices so you can access music, movies and photos right on your Samsung TV screen. Files on your PC, camera and mobile devices can wirelessly and effortlessly be available right on your TV.

Just remember, the formats are usually very rigid.
