Best temp monitoring program?

I think you'll find most people that run sub-zero temps actually use a hardware thermometer , but it really does depend how cold you intend to go.

If you are only going to -20 to zero degrees C , you can probably use any of the software programs you like.

Any colder than that , and the accuracy and even the function of the onboard thermal sensors goes out the window.

Most onboard sensors fail around the -40 to -50 C mark. ( they don't neccissarily fail , but thats the lower limit on most parts' specs , so no manufacturers design this to go any lower.)
