I just recently bought a e6600 and Gigabyte GA-965P-S3 board, but I'm really clueless as to which memory to buy for it.
I'm looking for something $100 or less, preferably ddr800+ and in a 2x1Gb set.

I won't be overclocking initially, but would like to a bit in the future (no hardcore oc'ing) if it makes any difference. Thanks for any help!

ANY PC6400 (800MHZ) 4-4-4-12 memory in which the lower end of the voltage recommendations is not more than 1.9V. Whatever is cheapest.

Good for 3.2GHz cpu speed or better, no need for anything rated a faster speed.

Go to newegg.com and learn how to use the "filters" on the left hand side, its easy to get a list of all PC6400, CL4, DDR2, 2 x 1GB kit, memory sorted by price.

I like Corsair. /shrug.
