Out of curiosity, are there any dual-socket LGA1944 motherboards with a m.2 x4 slot? The x4 is important as it would be used with a SM951 SSD. And yes, I know that a setup with dual 16-core Opterons would be total overkill for what I am doing (gaming).

If you're not planning on using all of the PCIe slots, just grab an adaptor and use it in a regular slot.

I don't believe that adapters are bootable, which is a necessity.

I believe you'd just need UEFI support, but that might be an issue. You'd need the same even if it did have m.2 slot to boot a PCIe SSD unless the SSD provides it's own driver/bios support which I don't believe the sm951 does. The xp941 didn't either though.
