So i used Zadig to install a gamecube controller hub and accidentally overwrote my mouse drivers and it's not being recognized in mouse's software (Logitech Gaming Software)

Current mouse is a Logitech G Pro and this is how the device manager is showing my mouse's drivers

I'd like a way to fix this and/or a how to do a firmware flash

I've never experienced this, but there is a piece of software called deviceremover.
You can run it in safe mode (but no necessarily) and delete the offending drivers.
Afterwards, you should be able to one by one re-install the mouse.

The first thing I would try is right-click and uninstall all 3 devices. If it asks you if you want to delete the drivers, pick yes. Then reboot.
