Which build should I go for? Did I miss anything? Also could I reuse my Samsung 840 Pro 512 GB SSD

Double New Titan X or give up your man card.

Bigger, cheaper SSD.

Cheaper motherboard.

Better HSF.

Stay with the 1200w PSU or you're a wuss.

That is some strange advice, not sure what it means ;)
I seem to be playing my Vive a lot lately so I will add a second Titan X when VR handles SLI

I am 50+ and water cooling scares me ;)
I'd change:
SLI 1080 instead of Titan X
Add a large SSD to the 950 PRO SSD (awesome SSD, also got a pair of those )
750W is enough, you might want to look at what quality 750W is on sale right now.
Cheaper mobo!
Go with air cooling, I have systems with AIO's and my personal is a custom loop. With the next upgrade I'm going back to aircooling. Even my 5820K gets 4,4Ghz on air. 4,5Ghz on water is not worth it for me.

This is the dumbest thread ever.

You know, if you actually didn't know EXACTLY what you are doing, there might be some purpose to this build thread. But you do, so there isn't.

I don't think you'll use all the features in the MAXIMUS VIII HERO but if you don't mind paying the extra $$ for it then fine, its a great piece of tech to own.
I would go with the GTX 1080
a much bigger and better air CPU cooler
no need to go beyond 750W-850W PSU
if you're planning to SLI then don't but I would build it around the ITX form factor, huge full ATX towers are not fashionable anymore.

Don't be afraid of water-cooling. Have built over 35 high-end workstations with Corsair AIO's without a single failure in 4 years!
