You will not notice any speed difference. However there is a benefit to running 2 sticks, it is easier on the memory controller allowing for better overclocks.
Correct the strain on the NB is less. So for instance when all my slots are full I have to run 2T but with just two filled I can run 1T. So sure if you already have 2 1gb sticks use them instead of 4 512 sticks.
The interesting point would be to run 2 1gb sticks and 2 512mb sticks giving you the 3rd GB of ram but again forcing you to increase latency
