3900X Component help

Hello Forum, I am looking to build a HEDT machine that will also hopefully double as an ESXi server. Hope to dual boot between the two. Pretty much set on the 3900x and I have also bought a Corsair RMi Series RM750i PSU. I would also like to run 64GB RAM for the VMs within ESXi. Motherboard choice is up for grabs, but leaning toward the Gigabyte Aurous range. Not sure I will need all the bells and whistles of the Master, but wondering if the PRO might be ok. RAM is the biggest worry. I originally wanted to get Corsair CMK32GX4M2D3200C16 Vengeance LPX 32 GB (4 x 16 GB) DDR4 3200 MHz C16 XMP 2.0 but I have been reading that using up all 4 memory slots throttles the RAM. Is it better to go for 2x32GB RAM instead and just use the 2 slots? Graphics card I game a little, so I will carry over the 1050Ti and that will do me. I can upgrade that at a later stage. I run 4x8GB but of course is not the same as 4x16GB chips. I run my 3600 Corsair at 3800 and with 1:1 Fabric clock and have no issues.

Oh and on an MSI X570 Board with the 3900X

I have the 4x memory chips. I ordered them at the same time and their serials are all sequential. I will give it a try and see how I get on. On to the mobo now- I have always gone Asus, but I quite like the Gigabyte Aurous Master.
