So same technology that Disneyland has been employing for decades. What happens if multiple people walk side by side, only picks up one? Or does it have some sense of intelligent scanning?

Good question. I would satisfy this particular scenario with the addition of a front-facing beam "looking in" to the door frame. When the side beam is triggered, activate the front-facing scanner. Use that data then to calculate how many entities went through the door at that particular moment. Feed that instantaneous data into your broader system.
