IMO, a 760 will be the minimum you need to see significant gains. I would just try and save up for a 970 or wait and see what the 960 has to offer.
Eyefinity was the feature in recent memory that made me to that. I went from a single GTX 280 to Xfire 5870's. Along with monitor costs, the price of entry was pretty steep at the time. No regrets, as I still enjoy multi-monitor gaming to this day.

I'm guessing you have never handled an AMD 6900/7900. All it takes to changes BIOS is moving the switch over a position. It takes no effort whatsoever. If taking an extra second to switch to Uber mode is a show stopper, I simply don't know what to say.
The 780ti is a competitive card with a non-competitive price tag. I realize they had no competition for 8 months, but their pricing doesn't reflect today's market. $599 would have been the perfect price tag (imo) for the better noise/thermals.
