It's widely known that gaming performance on these APUs is severely hamstrung by memory bandwidth. If you plan to game you definitely want both channels. If you're just using to watch movies and crap, probably doesn't matter.

Yep I hear you. But if I can find a 2080 for $600 and sell my 1080 Ti for $500, it's definitely worth $100 for me to play Metro with ray tracing.

I'm tempted. My 1080Ti is plenty fast for my ultrawide 1440p but I really want to play Metro with RTX GI on. This seems like a better deal than the 2080 Ti.
