Depending on the amount of modding your willing to do, just about any full tower server case should do. As of right now though, I don't know of any cases that will let you easily bolt up any of those configurations.

I didn't get a message from Acronis. After making the drive image, the only option it gave me was to restore the entire drive and remove the partition table on the new drive. It didn't seem to have a feature that would allow me to install to a specific partition.

Well, I'm currently in gparted. Maybe I don't know enough about the program to understand what I'm looking at, but none of the partitions are labeled as "extended" under the "file system" tab.
As it stands right now, the 160gig drive is formatted with a 74.5gig ext4 partition. It also has a 4gigabyte swap partition. The rest of the hard disk is formatted with a 75.1gig NTFS partition.

I personally am a big fan of Ubuntu. It is very user friendly, but also provides the tools to do actual "linux" things like compiling software and editing config files.
I've tried something similar in the past with very lackluster results. While is sounds like a really good idea, few games support dual monitors and even fewer support 3+ monitor setup. Sorry if this was not that answer that you wanted.
Logitech speakers are always a good value. When they first starting coming out with the 5.1 speakers, it had a solid midrange, but lacked doing a decent treble. IMHO they have substantially improve the frequency range and speaker response since then.
