if you just want to wipe your ipod, download the ipod updater software and next to the update button there should be a button that says something like restore, that loads the factory settings and wipes the drive if i'm not mistaken

yes, its called the 2.5 to 3.5 adapter that you can pick up at your local radio shack. it's a simple little plug, just smaller than you reagular speaker jack.and adapter shouldn't cost you more than 3 or 4 bucks.
