I've got the Etymotic ER-6i's and I love them. Some people don't like them though so I'd read some reviews and see if you think you might like them, but I personally highly recommend them. I found them for $90.

There was a program that could convert songs you bought on iTunes to .mp3, but I believe iTunes 6 stopped it from working. Like everyone said, your only real option is to burn the songs and rip them manually. And in the future, buy your songs from Allofmp3.com instead.

Take a look at the Grado SR60s. I've been told they have the best sound quality of any headphones under $300 (I can't speak from experience because I've never heard $300 headphones - but the SR60s beat all my other headphones). You can find them for about $70.
If everything you need runs fine, then there's no reason you need to install them. However, some specific programs require that they be installed, so you may eventually need to install them to run certain things.
