Lanschool is a good product, we use it in our schools. You could also check out Vision by Netop, we use that as well. http://www.netop.com/classroom-management-software/products/netop-vision.htm Not as lean as lanschool but a bit more functional.

Foxit pro is good and fairly light weight. If you're creating simple PDF's that is the one I would use. Just remember... even though Acrobat is a pig it is king for compatibility. If you are using this professionally I would definitely consider going the Acrobat route.

The retnia display is beautiful, our apple rep tells us its probably coming to the iMac next. If you're going Apple, not gaming and price is no issue then then the retnia macbook is what you want. Definitely wait until after June's announcements though...

You could use Apple Open Directory with Lion Server. Not nearly as robust as Active Directory, but great if all you need is authentication. I would stick with AD if you plan to add Windows machines down the road though.
