What RAID card would you use for these? I'm thinking about an Areca 1280-ML with 2Gigs of Cache but I don't know if it's compatible with the WD20EADS hard drives.

I'm pretty sure you can't. Even if you could, you wouldn't want to as it would require lowering the Front Side Bus which would slow down the CPU as well
