The Shuttle ST20G5 has been announced (and apparently shown @ CES).
It's using the new ATI RS480 chipset, but unlike the the SN25P, it uses the better looking G5 case (whether it's in silver or black is yet unknown).
Currently the only PCI-E Shuttles are the SB81P and the SB95P

If you're looking for a gaming machine, than AMD should be your only choice.
Since you want AGP, than you've got 3 shuttles to choose from:
SN85G4 (s754) --->most stable
SK83G (s754) --->budget sff
SN95G5 (s939) --->fastest and best looking

- external USB devices not working correctly and causing system instability
- xpc being very picky about what ram is used (easily fixed by using what other successful SN95G5 owners are using)

If you want to keep youre current CPU/Ram/GFX then you're best bet is the SN45Gv2 (SN45Gv3 is coming out, but lacks Soundstorm) as it's pretty cheap, and would be a great budget box. But this route isnt much of an upgrade from your current ATX system, other than just switching form factors...
Socket754 isnt very 'future' proof, as I think AMD only has plans to go up to A64 3700+ (that being said, neither one of those shuttles are future proof either, as they are using AGP).
For the HDD, definately go with the Samsung... the quietest of the the bunch.

yeah I know it'll be a huge bottleneck, but I was wondering if the older and slower ram will hold up for a couple of weeks... It's just that after buying the cpu and the shuttle xpc, I probably wont have the money to buy the ram (thinking about going the Corsair twinx series).

The one I got today is pretty good... minimal backlight leakage and no dead or stuck pixels.
The backlight leakage kind of resembles bander's leakage problem in the LCD to the right, -except I only have the minimal problem in the bottom left corner of the screen.... everything else is black.
