Depends how far away you are sitting vs. how much pixel real estate you want (for web browsing etc.) vs. how much you're willing to pay vs. how powerful the graphics card you have is. A 580 should be ok for today's games on a 30" but maybe not a 285.

If the panel is glossy it may be lesser quality stock that Apple didn't want to use, or LG may be producing a level of surplus that allows Hazro to purchase those panels without a premium. Just my theory based on your suggestion.

The question is whether the monitor itself will support it from HDMI input. Just been reading around for the Dell 3008WFP out of interest and apparently it won't display 2560 x 1600 from any HDMI source.

I doubt your laptop even has a dual link DVI output. You could try HDMI if your laptop has that but I have no experience personally. Displayport is another possibility but I haven't seen it on anything other than MacBooks...
