For storage, consider a wifi drive. Something like an AirStash+ will let you use large SDXC cards and you can transfer images to/from a laptop or an iPad.

Not much. You can up the ram to whatever the max is and then the size of the msata drive. It does have those two hdmi outputs, but I'm not going to say you can run to copies of XBMC and output a different signal on each....as I don't even have one of these...but I would have one if I didn't...
BTW, you may be able to avoid Windows to lower the cost. I haven't done it, but I believe it can be done, but you just have to ensure all the proper drivers exist.

XBMC on an htpc (a real PC) can certainly play movies & music. I have not gotten mine to do Netflix & Prime, but I can do that via the browser in Windows.
A NAS is good for media storage and access via a wired gigabit network. You can store the nas at a location that is hidden from view.
Why toss it? I have a Core 2 Duo system (not a laptop) that is still a quite competitive machine.

My issue with a Mac Mini is that tiny case offers little option for any cooling. While not extreme amounts more, the iMacs are large enough to offer a bit more cooling.

Some of you haves cases that will protect against being run over by a tank. I just want a case that will protect if I drop my phone and it lands on an edge. I dropped my 4S once and it landed on the upper right edge. The case took all the damage. It is thin little lightweight case...cost like $9.

I don't think there is an advantage to 1080p on a tiny tablet or notebook screen. I mention this only because if you base your requirements on that spec you're going to miss out on good options.
Its way too much overkill for a simple, reliable htpc, if you just want to watch movies. One zero too many. I'd get an intel NUC at this point if I were doing a new one. Store your content one a NAS off your network. Get xbmc on there and you're golden.
