I use a Samsung 830 non Pro its fine, as would a 840 non Pro if your concerned about price.
You can find a 840 non pro, 250GB for as low as $169.

If you want more SSD space, just add it as a secondary drive. Stripping opens you up to risk, if one of the drives packs it in you will loose all data.

You have some other really weird going on, I know of 2 people at work here that run these drives in raid, one is software and one is using a LSI 2960-4i.
If the Windows built mirror is on separate disks to your OS disk, then yes, you should be able to re-install your OS on your OS disk and then read the mirror on the other disks. Can I guarantee this? absolutely not, I've never done it, but the theory seems reasonable.

Raid 0 gives you no protection. It gives pure speed. If you go the route of a SSD you won't noticed a heck of a lot as far as performance goes, if anything. Benchmarks will show you better numbers but the cost/performance isn't worth it for gaming.

Sounds like your drive may have developed Bad Sector's and that would explain the locking up when accessing a certain file.
Copy what you can, 1 file at a time or in batches, it'll be a painstaking process but may be your only option.
