Hardware RAID is fine, and I never said the OP should ditch the controllers. Just a suggestion on filesystem to achieve redundancy and performance for this level of storage, because I really think it'd be stupid to run 100TB of storage with no redundancy.

You should really look into using an OS with ZFS support. It was made for this type of application.
You can create "raidz" (raid5) or "raidz2" (raid6) groups of disks - say 8 disks per group -- then you can then create one large storage "pool" out of all of your disk groups.

Handbrake (CLI) is, IMO, the best DVD ripper you can get.
I don't have any suggestions for copying or burning DVD's though, as I simply rip them and view over the network via HTPC.

Lots of people using Conky for stats on the desktop, and there are also many people who have little widgets in their Gnome / KDE / XFCE task bars for cpu / memory usage.
If you're running Gnome / XFCE, you can run the gnome-system-monitor applets...
keenan's method is quick and easy, and should work for you ... however if you need to connect to an external mail server, do authentication, etc, I've found smtp-client.pl to be very helpful.

The card I got is just purely a SATA controller - although with simple BIOS / firmware updates, you can give it hardware RAID.
I'm using ZFS' built in raidz2 functionality since it blows away the RAID functionality of any sub-$300 RAID card, plus ZFS has some very nifty features.
