actually, anything you delete that comes in the base install can be reinstalled just by running the CD that came with the mac. pretty simple. And you can customize an install by selecting 'customize' during the install process off of the disk.

i wouldnt touch it. you can get a faster setup with pretty much the least expensive quad core intels that kills the performance on that system.
