if you turn off HT your temps will drop a decent amount. it sounds like there are few programs that utilize HT so if you don't run any of those programs it would probably be worth disabling because your temps will probably hit 80 after a few hours.

i can't say anything about overclocking a xfx card but i have the evga gtx 260 1255-AR and it came with software that lets you set the speeds. assuming you use a case with good airflow you should be able to get to the 666 speeds or higher without any problems.
if you go with the i7 get at least 3gb of ram (they're made for triple channel) and a stock gtx 260 and overclock it. the evga gtx 260 1255-AR is easily overclockable to the xfx black speeds and it comes with the software to do it.
