I´m not that familiar working with VB, but running HD AV outputs through an VM is something I would never recommend. FPS drops, probably no GPU acceleration, and I would assume problems playing surround/HD audio...
A proper firewall is the first thing that comes to mind, but isn't everything encrypted at the service level either way? Dont you have to use some kind of authentication token to login to those services along with your username and pw?
What Liberty said, was basicly going to recommend those same NAS's. Or perhaps just build a cheap whitebox diskserver and run FreeNAS or unRAID - that's what I would do at least, just for future options.
Do you use the laptop as a PMS and PMC or just the PMS? Wouldn't you want a NAS with enough CPU power to run the PMS and transcode matieral to other devices, Plex/Web or mobile devices?
ElementaryOS for everyday usage, dualbooting W8 for gaming, mix of unix/MS for server platforms, W8/linux mix for server monitoring stations and misc information (metro apps for eyecandy stations f.x.)

You could utilize the Backup and Restore functions for simple image backups to a secondary drive, but that's not automatic, at least not in W7. For automatic image backup you could look at EzBACKUP or TrueSafe.

Been using it now as my primary OS since release, no big complaints. The new multimon support needs some finishing touches but the "desktop" experience hasn't changed that much, and I've begun to appreciate the Metro UI more and more.

The really impressive boot times, the new Task Manager, the improved Explorer/ribbons, Hyper-V, ISO and VHD mounting, new c/p transfer window, much more hardware acceleration, and probably loads more I´m forgetting.
Running it on one of my T420's and besides a lack of Optimus/NVS4200 support everything else works almost out of the box, including the Lenovo software.
Although I do agree with most of what griffinhart says. I really cant see myself using the Metro UI in it's present form in my multimon setup...
For me, the multimonitor setup has always been about efficiency, getting more things done in less time. Working on many virtual machines/remote desktop sessions simultaneously for example. That's just something that's really hard to do with only one or two monitors.

The laptop you link to is most likely an overkill for a non-gamer.

Thanks :) The T420's we have came with the dual GPU's, so with the Optimus technology (NVS4200M 1GB) and the Series 3 PLUS dock I can drive 3 external monitors.
As I am all about multitasking and desktop space, this works out perfect for me. For the heavy duty stuff my servers take care of it.
