Those links it looks like the cards are basically the same, I'm not a fan of the hybrid design though.
MSI also has an EK Sea Hawk X, nice looking card IMO.
For 5GHz and only 3000MHz memory, the only thing you should have to touch is the CPU multi and CPU vcore, the rest of the voltages won't need to be changed.
Your temps are not good for a delidded CPU though, what thermal paste did you use?
For 5GHz you should be 1.25V to 1.35V depending upon...
The Dominator Platinum Torque are pretty sweet.
I ran a 4x16GB 3200 kit at 3466 for a couple of months without issue.
Personally I'd steer clear of the Kingston.
Strix boards fall toward the middle of the road ROG series, gamer type boards. Decent OC features, but mostly target toward gamers.
Rampage is top shelf gamer, Apex is 100% Extreme OC with ROG badging.

Z77, Z87 chips would degrade from high volts and heavy load. Todays chips are more durable and don't degrade as easy.
The 7900X and 7740X both died because of moisture on the board at high volts, I did a poor job of prepping the board.
From my perspective, it's made it harder to find specific cards on the used market, especially ones that have not been used for mining.
I'm curious how mining has effected the RMA rates for GPU's, especially for companies that go past 3 years on the warranty.
