I don't have use for more than 4 but I guess I could maybe find somebody that would need it? It seems that FB-DIMM's are plenty but regular 240-pin DIMM's are a bit harder to find.

Well it looks like my offer for a E3-1280 was accepted so I'll be using the intel board.
Comparing both, seems the E3-1280 will have a lower typical power consumption compared to my i7-870 Asus setup.
I actually haven't through about much about passthrough at this time.
My plans for the hypervisor is:
-Gain experience with proxmox/and possibly xenserver
-VM's to create:
--Pi-Hole ad blocking server/DNS
--Few Windows Server OS's to setup AD/DHCP and such...
