Just to update with the solution... I booted to ESXi 5 instead of 5u2 and it worked. I then upgraded to 5u2 and they disappeared. I made sure it had the latest drivers...still no NICs I then upgraded the firmware on the NICs and they are all back. Hopefully this helps someone.
