BF3's custom FOV setting works just like BC2. You will gain vertical FOV with the exact same horizontal fov by going from 2560x1440 to 2560x1600. If you are losing vertical fov like you stated you should try correcting your fov setting.
For those who are not so closed minded. When FOV is set to remain the same horizontally you would gain 120 vertical pixels of extra vertical space (FOV) and not lose a single bit worth of horizontal FOV.

You can not drive more than 2 monitors from the DVI+HDMI ports. The third monitor (and fourth etc) have to be native display port, or on an active display port to DVI adapter.

It is not a good idea because it puts a lot of current though one molex connector. They are rated at 10amps per pin though, so you might be fine with just one.
