I share an internet connection (using a powerline) with a house mate and several others but i want to set up a NAS to access over the internet and wanted to know the most secure way i could do this?

I was thinking about setting up another router with vpn but im interested in know if there is anything else i should be doing or/what setup and equipment you guys would recommend for it.

VPN with two factor authentication. If VPN doesn't offer it, NAS unit might if you go with Synology or QNAP NAS.

I do exactly what you describe. First you need a NAS. Building a TrueNAS/Freenas has a learning curve, but Perf/$ you can't beat it. Then set up a pfsense router and you can run a VPN off of that. I access my NAS remotely all the time. Third, put your roommates on a different VLAN using your pfsense with a firewall rule so can that vlan can't access your vlan. Done.

I have a synology unit +720 that would be connected to the powerline in my room. The way you are explaining it, sounds like i would have to put a pfsense router in my roommates room? am i wrong?

OFaceSig. Is there anything i need to do with the with the main router to connect my router to it or can i do everything my end?

No, you would use a pfsense as your primary router. Then you can create VLANs to seperate your traffic. In the pfsense you can set up rules that their VLAN cannot touch your VLAN. If you merely put another router in their room, NAT will still allow them to your get your equipment.
