So I read the instructions and tried to do the 3mm pea then showing it method, this didn't even come close to covering my Ryzen 9 3900X, had to add like two more peas to get it to spread and cover the entire CPU. Did I use way too much? Does the 3mm pea and just applying the cooler still work well and cover all the chips under the spreader? I'm more used to AS5 which says to use the center pea method and use the pressure of the cooler to spread it. Just don't want to burn up my new processor lol.

Putting too much thermal paste on a CPU is a myth, unless the paste is conductive and spills over onto motherboard components or into the CPU contact pins.
Putting on too little paste can be a serious problem for cores overheating where there isn't any contact between heatspeader and heatsink.
As long as the CPU heat spreader is covered with paste, and the cooler heatsinks is firmly attached and level, there won't be any issue.
You can always remove the cooler and check the spread of the paste on the CPU heat spreader to see if that was enough, then clean and reapply the same or more, if needed.

Take heat sink off and check out how the paste looks.
Though, you do need serious cooling to handle 3900x under full load from something like a benchmark. Sounds like install error

It was an error, I trusted the motherboard OC utility which boosted the CPU to 4.1GHz and not sure what voltage and my Corsair H115i RGB PLATINUM was not setup to ramp up correctly.
