2080S or 2070S???

I know the 2070S is by far the better price/performance, but I'm also going to be buying a new monitor and watercooling my PC in the next few months. So, I've got a few questions:

If I'm watercooling mostly for fun/looks but maybe a little overclocking, does it make any sense to buy anything other than the founder's edition cards since any fancy cooling solution will be junked anyway?

Second question, if I'm looking at a 120 or 144hz monitor, is the 2070S going to be a bottleneck on a 1440p in AAA titles?

I'm no monitor expert, but I've been looking at a couple of monitors that LTT has featured. The LG Linus recently shot a video on as well as this Aorus: https://www.newegg.com/black-gigabyte-aorus-series-aorus-ad27qd-sa-27/p/N82E16824012006

Spending the extra $200 is definitely doable for the 2080S, but if the benefits aren't really going to be significant I'd rather keep my $200. I know there's no clear cut answer here, but I'd be interested in your thoughts and opinions on how you all would think about this decision.

me personally would skip watercooling in favour of a 2080ti, likely to give better results. and these new cards gpu they can maybe net u a few more Mhz. a good chip on stock cooler can beat high end aib cards, noise another factor. there really isnt a huge benefit from a good aib to watercooler, the temp difference isnt high enough to give any meaningful boost, and u can still get a card that is hard to oc. and these noctua fans are cheap and effective as hell. if you are not cutting edge fps gamer, i dont think u will see alot of difference from 120 -> 144hz. for me the lines blur at 90 fps, and from 144hz to the oc 165hz i cant tell at all really. that is what i would choose anyway. if i could pick a display that looks better, anything above 120 hz i wouldnt bother with. 90 fps is, there is some research into it that is where the lines blur for most ppl that was before i knew about it and i thougt it before i read it.

Thanks for the tip on the monitor. I'll take a close look at it.

I know water cooling does not make financial sense - I'm doing it for looks, noise, and mostly because I just like to tinker with things.

Big monitors suck for alot of games makes you blind.
Water cooling is just for that "looks", unless you're great at overclocking, but for mild or little overclocking a "be quiet" Dark Rock Pro 4 will do, so save $300 and put that towards a 2080 with better cooling than the FE.

I use a 32" curved at homes works well for many things, but thinking about picking up a 27" with freesync just for games and to have a second screen when developing (much easier to test on one screen and debug in another).
