Need to backup towers in a 24x7 MOC

We have a 24x7 MOC (Market Operations Center) that runs 8 towers. All are Windows 7 to Windows 10 Pro. All need to run as close to 100% uptime as possible. Is there some software package that will allow "live" image creation on a schedule, without needing to reboot or disrupt the usage? Ideally, I'd love something with a central console that I could install on each system to keep a weekly update/snapshot of the machines, in the event of a hard drive failure.

I had an SSD die on me today, and it would be great to be able to have spare drives, so if one of these towers had another failure, I could pop in a new drive, lay down the latest image, and boot it right back up.

The data on each tower isn't important, as they mainly run monitoring software. The have unique configs, but all sit on the same domain. I'd also love to be able to exclude a file type, such as .ost, and several exist on each machine, one for each operator that logs in.

Anything like this exist?
 
Maybe check out a Unitrends backup appliance? It can run on a VM. One neat feature is it could replicate your backups over to another machine (Called a replica) that is ready to spin up as soon as needed. It can do image snapshots using an agent running on the machines without interrupting the machines usage.
 
Check out a program called AOMI Backupper. We use this for live images/backups and it does not need a restart. This can also be run on a schedule especially on the Pro license.
