If I installed 2 different email apps with the same email address, will they interfere with each other? I am trying to find out which app I prefer.

Only "interference" should be whether you've read a mail.
 
Some e-mail clients delete the message from the server it pulls it from. If that is the case, then the message will get downloaded to one email client and not be seen by the other. Its a simple change in your email client to not delete it from the server.
 
If you do not use POP3 protocol then there's not going to be a problem.
