So I have found out my PSU a: Thermaltake SP-850M is a tier 4 unit and I'm thinking of replacing it with a tier 1 unit (EVGA 750w G2). Before I do I just wanted to ask am I overreacting? I have not had any issues that I'm aware of in the past 2-3 years I'v had the machine and according to a PSU calc I'm using about 500-550w.

So is it a peace of mind thing or a Dude get that shit out of the machine now!?

It is good enough that you don't need to worry about it. It will handle an 850 watt system without any issues.

Buy that new one and send that one to me.

OR

If it ain't broke don't fix it.

Check the PSU voltages with HWInfo64. If the 12v, 5v and 3.3v rails are within 0.2V of target then the PSU is OK.

Check the PSU voltages with HWInfo64. If the 12v, 5v and 3.3v rails are within 3% of target then the PSU is OK.

12V = 11.64 - 12.36
5V = 4.85 - 5.15
3.3V = 3.2 - 3.4

^This (with the above corrections). And if out of spec, follow the below flow-chart.

If in warranty - RMA

If out of warranty - replace

Software readings can be notoriously inaccurate. Get a voltmeter.

12V shouldn't go as low as 11.64 or as high as 12.36.

On an Intel mobo, your mobo utility software should be accurate enough. Or use HWInfo64.

ATX spec allows 5% tolerance, which is 11.4 to 12.6 volts.

Intel or not, software readings are known to be inaccurate. A voltmeter is cheap and more reliable.
