This ipod has iOS 5.0.1 and is jailbroken. Can this be upgraded to some version of iOS 6 and still be jailbroken?

The requirements say it needs to be on iOS 6 already. Is this not true?

As you may have guessed, I am not an Apple person. :) I am doing this for someone else. Can you choose what version of iOS you install from Itunes? From what I have been reading the latest version is 6.1.4 so can I choose 6.1.2?

You got to download 6.1.2 because that's the latest jailbreakabke iOS....anything later and you wil not be able to jailbreak with the tools out right now.

iTunes will always want you do download the latest version....something you don't want. Google "download iPod touch iOS 6.1.2"
Look up how you can update to the iOS file you downloaded, I believe that it is when you are in iTunes you click update while holding the shift key...then you can look for and choose the 6.1.2 iOS ver. that you downloaded.

Unless you saved the SHSH blobs for 6.1.2, you will not be able to update. In fact, trying to update will just put you into an endless update loop until you install the latest iOS6 release (which will cause you to lose your jailbreak).

No, if you didn't already update it, you can't go to iOS 6 and jailbreak, since Apple will no longer sign anything but 6.1.3. Once iOS 7 is released, we might see an exploit released that works on 6.1.3 (or whatever the last version of 6.x ends up being) so that older devices without iOS 7 support can always be jailbroken. My iPod Touch 4G is on 6.1.2 jailbroken, but honestly I wish I'd just left it at 5.1.1.

oh crap so it can't be done. So upgrade to 6.1.3 and then save blobs and hope for a jailbreak? How do you save these blobs?

No, don't update at all if you can help it. If you need to do a wipe and restore, you can back up your existing 5.0.1 blobs and then do a fresh install of 5.0.1. Once you're on 6.1.3 you can't really back up the blobs, since you need an exploit in order to gain access to gain access to them.

OK. sounds like if you can backup blobs you can jailbreak correct? Is Apple still signing 6.1.3 since 6.1.4 is out?
