I have a RAID 1 setup in my file server / domain controller at the office. It has completely degraded to the point that it blue screens before completing a boot up. Can I disable the raid in the BIOS and try booting to each individual drive that was previously in the RAID array to see if I can get a different result?

Depends on the raid controller and where the boot loader was installed. Most of the time it works just fine, but I have seen cases where it needed to be connected the controller.
That being said, if you are getting blue screens that problem is likely on both disks. You should restore from backup.
Sounds like you're using onboard RAID, so yes you should be able to disable RAID in the BIOS and try booting into Windows. Just make sure you stay plugged into the same controller like kac77 mentioned, otherwise you might get Windows throwing STOP 0x7B errors at you and rebooting.
Since you're using RAID 1, you can also hook one of the disks into another computer as a slave and pull off any important data if you were bad and didn't have a proper backup.
