I am thinking of jumping to Sandy Bridge and jumping into the SSD game for the first time. My biggest question: what are you installing on the SSD besides the OS?

I've got a 640GB AAKS and a 1TB Green right now. I assume I would want to install my games on the SSD, but that is going to run out of room pretty quickly with Steam and everything else. What is the common practice with these things?

I put Win 7 on it, my photoshop stuff, and CoD Black Ops. ( 60gb Vertex-2 ) got room to spare, works fast. Ik can only play 1 game at a time, so only CoD is installed there.
All the rest goes onto my normal hdd's

I put all my applications(Office, Photoshop, and such) and my most played game at the moment. You can install Steam on a second drive and still have some of your games on the SSD if you look into junction points and symbolic links. Look fro a program called Steam Mover on Steam's forums. It makes the whole process easy as it's a little GUI that handles everything else.

I keep anything that loads on startup on it and the slow loading apps that I use regularly like word, outlook, photoshop etc. Anything else that only gets run every once in a while or is considered "data" goes on the hdd.

I just put my applications on there and games. The rest, I just redirected my user library directories (My Pictures, My Documents, My Music, etc.) to my storage drive.

This way, in case the SSD goes bad for whatever reason, I have everything important on my storage drive.
