Well, I've been tossing around the idea of how to get a lot more storage onto our backup server.

I already have a pretty modern server.

I could get something like a 2U SAS direct attached storage and a new RAID controller to handle it.
* Controller (3ware) ~$800
* Cabinet ~$1700 aftermarket (ex. http://www.scsisource.com/sas_enclosures/)
* Of course all the hard drives...

Or a big dell server with lots of bays and the right raid controller. I have no idea how much this would cost. I'm gonna get my dell guy to quote me out.

What do you guys think.

Really? 1,700 bucks? Read this thread and get some ideas. You can do much better than a 3ware card and a 1,700 case.

The norco case is nice.

Now what RAID card to plug them all into? Redundant power supply...etc etc

Supermicro CSE-846e1 case, JBOD-mode controller, CBL-0168L external cable, an LSI card with an external SAS wide port, a SAS cable to go from the host to the Supermicro. We did this at work for $1700 or so, and this holds 24 drives in 4u. It's much nicer hardware than other solutions I've used---dual power supplies, the SAS expander is awesome, good fans (except if you're trying to use it at home). I researched it a good bit ahead of time, and we're very happy with it so far.

Sorry, somehow missed that you said it was for a backup server, so I'm assuming this is a business environment. Forget the Norco case then IMO.

What type of server is the current backup box? HP, Dell, or white box? If it's a name brand server you might want to look into their drive shelf options (Dell MD1000, HP MSAxx).
