I'm thinking about upgrading my CPU. Here are the following options I was considering.

1.) Intel Core 2 Duo E6600 $309
2.) AMD Athlon 64 X2 6000+ $239
3.) AMD Athlon 64 FX-62 $369

With intel, I'd have to buy new mobo and memory, but I can still use my Zalman heatsink. With the AMD's AM2 sockets, my Zalman is no longer useful and I'd have to buy a new mobo.

I use my computer for all around applications: image, video, audio editing, gaming, movies, etc. I like when my machine can run erverything flawlessly. Which one of these cpu's would perform the best? Or should I just wait until the Intel Core 2 Extremes and the Nvidia 8800 GTX drop in price and go for an entirely new system?

Best option!! I think there is a quad is supposed to be around 266$ soon from intel. At this time the r600 may come out also and can pick what you like best at that time.

I have to agree with RogueTrip on this one, but I will go a step further..

AM2+ is coming out later this year. AM2 and AM2+ CPU's will work in either socket, but obviously an AM2+ CPU in an AM2 socket will be slower than it could be in an AM2+ socket, and an AM2 CPU in an AM2+ socket won't be able to use all the new features of that socket.

So, right now is not the optimal time to buy an AM2 mobo, though it is a fairly good time to buy the processors.

Add that to Rogue's comment and it seems likely that an Intel Quad after the price drop is the way to go.

That price is at year end.

Best bet is to wait a bit and see what Intel and AMD prices fall in the next week or so.

Intel is probably better short and MAYBE AMD long term.

People seem to be ignoring the fact that you're currently single core and 1gig. You will notice tremendous improvements going to a dualie with 2 gig. If your objective is to go to the Quad at the end of the year, get a 775 board and 2 gig and slap something like a low end Pentium D on it for now

Here are some AM2 combo deals from Newegg. You can get any one of these, add some DDR2 ram and still be less than any of the cpus you listed. You can slap in a quad core AMD proc at a later date.

Wouldn't you also have to upgrade your RAM for the AM2 system?

Yeah, but Intel is supposed to drop prices as much as 30% sometime this month...
