Just wondering of anyone here who has the 2020 G9 knows if we can use this monitor with a custom 16:9 resolution with black bars on the side.

I play alot of PUBG and need to have a 16:9 resolution because I can't concentrate well with ultrawide real estate.

If I can use 16:9 resolution, will it still run at 240hz on this monitor, with or without VRR? And would the input latency be less or more?

No need for a custom resolution, it should support say 2560x1440 right out of the box. I am not sure if it does 240 Hz with that setting but VRR will work.

For custom resolutions you might also try 3440x1440 and 3840x1440. Those work well and give a nice performance boost while avoiding some FOV distortion on the sides compared to the full resolution.

If it does do 2560x1440p, does it centre the image with black bars on the sides or is it stretched onto the entire screen?

Nice, now just gotta find out if it still does 240Hz like that, and if input latency is not increased.

The output resolution will still be 5120x1440, but the render resolution will be 2560x1440. Meaning you should still be able to use 240 Hz with no input latency penalty.
