Is there any difference in ethernet performance amongst WiFi routers with 1Gb ports?

For example, between an AC1200 router thats costs around $30 and an AC5400 that is ~$300. Both have Gigabit ethernet ports - would there be a noticeable difference in wired network performance?

I'm asking because I want to justify a new router purchase, but the one I have now works fine for wired and wireless. But any improvement to wired performance/stability would be reason enough to upgrade.

No. gigabit is gigabit.

If there is any performance difference it won't be because of the Ethernet ports. It will be CPU, memory, and what things the routers do.

There are also multi gig Ethernet ports which allow for 2,3,4 gig transfer speed but you would also need a switch which supports that.
