Which block?

I have the Phanteks block for my ASUS 1080ti and really, really like it. The performance on the two will be within a degree of one another, so I'd say go with the one you like the aesthetics of.

One other thing to note - I'm not sure if it'll be the same for the Gigabyte version, but on my ASUS Phanteks block I was able to reuse the stock ASUS backplate - a small nicety, considering what EK charges for one...
 
Not sure the Heatkiller or XSPC blocks will work with the non-reference PCB design of the Gigabyte Aorus card.

I wouldn't mind getting the Gigabyte Waterforce block, but they don't sell it separate.
You would mind getting the Gigabyte Waterforce block. It can't be disassembled for cleaning without somehow removing the glued-on aluminum fascia that covers all the screws!
