While I think we are moving toward "chip and signature", I do think it is at least a step. Most of my cards have already been replaced with the chip variant, and at retailers that accept chip already, it will not accept the stripe when swiped. I'd imagine soon, we will be purely chip based.
As for NFC payments, I love them. Been using Google Wallet for years, and now that the mass of the general population will finally have NFC, I can see it being more widespread.
I had an iPhone 3GS and 4S, and it grew repetitive and I switched over to Android and love it. It is nice seeing Apple to have caught up, and the phone itself looks amazing and I'm trying to convince my wife to switch back so I don't have to tinker with her G3 as often.
