Okay, I did something really stupid and now I need to know how to fix it... :(

We have all of our user's My Documents folders redirected to their user directories on a file server. That way when they save to this folder, which happens by default for most programs anyway, it's saved on the server where it's backed up. Remote laptop users have their My Documents set to work offline, so if they're not connected, they can still access their documents and they are synchronized the next time they connect. This is all well and fine, but a couple months ago they moved everyone to a new server. We thought we had redirected everyone, but yesterday I had a remote user call about another problem and I saw she was still redirected to the wrong server. In a brainfart moment, I set her My Documents folder to no longer work offline, but couldn't redirect the folder because she didn't have admin rights. Needless to say, she had to go for a meeting and I told her I'd take care of redirecting the folder today. Unfortunately, she emailed last night and said that all of her data was now missing. DOH! Since I'd set the folder to no longer work offline, I think it cleared the offline files folder of all her documents. My question is, can this data be recovered? There are some really important documents that she has to have, but I don't have a clue as to whether they still exist or if they got deleted when I set the folder to no longer work offline. Any help would be GREATLY appreciated!
