i've heard there is a linux program that will filter email on a network to block spam and viruses. is this true if so what is it and hows it work?

Wow, that's sorta wide open.
If you are referring to a mail server on a linux box, you can run spamassassin ( along with a few other utilities ), and you will effectively cut spam down to a low roar. I run qmail with a rbl and spamassassin, along with qmail-scanner, which catches emails with broken mime types ( which has always been spam for me ), and I get 3-4 spams a week that get through.

ok here is the deal 80% of my company's transaction with there customers is through email. we use echange. the people who do the most email are getting lots of viruses (the comon type netsky mydoom, ect.) and a couple get pretty nasty amounts of spam. one guy got like 75 in one day. what i'm looking to do is to use an old junk system to run as a filter to get rid of the viruses and spam before it gets to the server

You can set your Exchange server behind a Linux box running Sendmail as an email filter. That is how we have it setup. I didn't set it up though, and don't know how to do it myself yet. But yeah it can be done and I know there is some documentation on the net about it to get you started. It works very well.

How do you know it's spam?
I would recommend setting up a folder in the user's email account for spam, and have those messages sorted there. Then, they could check it every now and then for legitimate emails. Further, if any spam gets though, they could drop it into that folder, and you could use those folders to train your spam program ( spamassassin, for example ).
What features do you need from the exchange server? I would ditch that entirely if i could and go with a linux based system. Postfix is nice, I like qmail, sendmail is sorta scary.
