I was thinking of getting a RAID 0+1 setup sometime in the future, and I was wondering if this sort of sequence of actions would be possible:

1. Start off with a RAID 0+1 setup, full of data
2. Split the 0+1 into 2 RAID 0 sets with the same data on each
3. Format one of the RAID 0 sets, reinstall OS, programs, etc. on it
4. Copy all neccesary data off of the other RAID 0 onto the formatted one
5. Format the other RAID 0 set
6. Rebuild the RAID 0+1 set with the drive that now has the data on it.

I would think this should be possible, since it basically just involves splitting off half of the set, and then rebuilding it onto the other set, but I wanted to check if there's something I missed. :)

i dont' see why you couldn't, just seems like a lot of work.

Should be doable but it's a bit scary.
Personally I'd just partition the array. Just chop off however much you want for your system volume, then make the rest a data partition.
