I have 4x73GB 15K SAS drives that I'd like to use on my home PC. I think what I'll end up doing is using an actual SATA controller (highpoint or areca), and using these in a RAID 5 for general storage or something else. Does anyone know if the above converters work well?
Does anyone have any recommendations for a SATA RAID card? This will have to be bootable (if I decide to go with RAID 1 for my OS), and has to have 4 internal connectors.

Unfortunately that won't work for what you want to do.
The cable you linked to only converts the physical interface of the drive. It does not change the protocol from SAS to SATA. They are intended for use with SAS controllers that have the individual SATA-style physical connectors.

Something like this should work just fine for you

It should work assuming your on board controller (i.e. Supermicro X7DCL-3--doubtful you have that in your desktop lol) or the expansion card (i.e. LSI 3041) have discrete ports.

Oh god...... NO. The Perc 5/iR is the scurge of SAS controllers, its slow and has no features. Just get a full blown Perc 5/I off Ebay.

As far as I am aware you will be required to get an SAS controller. SATA drives can connected to SAS controllers but I'm almost 100% sure that SAS drives cannot be connected to SATA controllers. Also - what ^^^ he said.... if you get a Dell 5i thats great but be absolutely sure you do not get the "integrated" version.

Correct. SATA will work on SAS controllers. SAS drives will NOT work on SATA controllers.
