Question though: What length SATA cables should I order to be able to loop around the back of the motherboard tray? I'm very sure that the 12" cables that came with the motherboard won't cut it.

I bought 18" sata cables for a v1200b build and they were way too short for running it behind the case. I would suggest 24" +. Of course it depends on your mobo too. On my P5B, the sata connections are towards the top of the case.
